These are a great alternative to sweet potato fries because an acorn squash has half the carb content than a sweet potato.
For the 21 day fix, this is 2 servings and it would be 1-2 Green containers and a tsp.
- 1 acorn squash
- 2 tsp olive oil
preheat oven to 400 degrees. Cut the acorn squash in half lengthwise and scoop out the seeds.
Cut into small wedges and make sure to cut the skin off the edges.
in a bowl, mix the acorn squash wedges with the olive oil and place on a baking sheet.
bake for about 20 minutes, flipping halfway thRough.
1 serving is about 100 calories.
